Pressure cookers have been marketed for decades as an easy way to cook delicious meals in a fraction of the time it would ordinarily take to cook foods via conventional methods. How a Pressure Cooker Works and Why They Can Be Dangerous

Pressure cookers have been around for over 300 years, but only in recent times has there been a focus on making these devices safe to use for home chefs. In general, pressure cookers consist of a cooking chamber with a lid that forms an airtight seal when properly closed. As the contents of the cooker are heated with the lid properly in place, the temperature within the cooker rises beyond the boiling point – in excess of 250 degrees Fahrenheit, in some cases.

Steam is produced, and this steam has direct contact with the food, which in turn cooks the food. Before the pressure cooker can be opened safely, the pressure within the cooking chamber needs to be safely released. Pressure cookers therefore have vents designed to allow pressure to safely escape from the cooking chamber. Today’s pressure cookers also have features that are supposed to allow steam and pressure to be quickly (yet safely) released in the event of an emergency.

Lawsuits filed against pressure cooker manufacturers allege (in part) that the safety features designed to keep the cooker sealed while there is still pressure in the chamber do not, in fact, prevent the lid from being prematurely opened.
